Hearty low-calorie, yet rich tasting soup.

Recipe Ingredients for 1574 Soup: Roasted Potato-Leek w/Ham

2 russet potatoes, peeled and cut 3/4 " chunks
3 leeks, white and light gree parts, chopped and rinsed of all sand
1/4 c. olive oil
1 tbs salt
1 tbs pepper
6 c. chicken stock, preferably homemade
2 c. chopped ham, trimmed of fat

Recipe Directions for 1574 Soup: Roasted Potato-Leek w/Ham

  1. Preheat oven to 400.

  2. Peel and cut potatoes in 3/4 " chunks and put in big bowl. Rinse all sand out of leeks and cut into small chunks, white and light green parts. Spin dry and put into potatoe bowl. Add olive oil, salt and pepper and toss to coat well.

  3. Place vegetables onto baking sheet in single layer. Roast for 40-45 minutes, turning every 15 min, until soft.

  4. Place softened vegetables and a bit of stock in food processor and puree. Keep adding stock as needed to loosen up the mixture. Pour into saucepan with remaining stock and ham. Heat and serve.
