This is the way Honey used to make Beef-Vegetable Soup and it is great. Also very low in fat and heathy. Each serving about 1 cup.

Recipe Ingredients for 1574 Soup: Honey's Style Beef-Vegetable Soup

2 tbs. olive oil
2 carrots, minced
2 celery stalks, minced
1 onion, minced
2 cloves garlic, minced
26 oz. beef stock
46 oz. vegetable juice
1.11 lbs. beef round steak
1 c. corn
10 oz. potatoes, diced

Recipe Directions for 1574 Soup: Honey's Style Beef-Vegetable Soup

Saute carrots, celery, onion and garlic in olive oil in deep soup pot until tender. Meanwhile, heat a cast iron skillet really hot and dice the beef round steak in 1" cubes and sear in hot skillet. Stir a bit. Add to vegetables in soup pot and pour beef stock and vegetable juice over. Deglaze the steak pan with the last of the beef stock and water and also add to the pot. Simmer all afternoon or about 3-4 hours until meat is tender. At the end of the simmer time, add the corn and potatoes and heat through, making sure potatoes are done. Makes about 12 1-cup servings.
