Cornmeal mush ... comfort foodie-ish

Recipe Ingredients for 1574 Polenta

2 tbs olive oil
3/4 c. yellow onion, finely chopped
2 cloves garlic, finely minced
4 c. chicken stock
1 c. cornmeal
3 tbs butter, unsalted
1 1/2 tsp salt
1/4 tsp black pepper
2 oz. Parmesan, grated

Recipe Directions for 1574 Polenta

  1. Preheat oven to 350 degrees.

  2. In a large, oven-safe saucepan, heat the olive oil over medium heat. Add the onion, salt and sweat until translucent, approx 4-5 min. Reduce heat to low and add garlic. Saute 1-2 minutes, don't burn.

  3. Turn heat to high and add chicken stock and bring to a boil. Gradually add the cornmeal while continually whisking. Once all cornmeal is all added, cover the pot and place it in the oven. Cook for 35-40 minutes, stirring every 10 minutes to prevent lumps.

  4. Once the mixture is creamy, remove from the oven and add the butter, salt & pepper. Once they are incorporated, gradually add the Parmesan.

  5. Serve as is, or pour the polenta into 9X13-inch cake pan lined with parchment paper. Place in the refrigerator to cool completely.

  6. Once set, turn the polenta out onto a cutting board and cut into squares, rounds, or triangles. Brush each side with olive oil and saute in a nonstick skillet over medium heat and grill.
