Recipe Ingredients for 1574 Frittata w/pork and vegetables

1 tsp olive oil
1/2 tomato, diced
1/4 yellow squash, diced
1/8 bell pepper, diced
1/2 mushroom, diced
1/4 onion, diced
1/8 c. frozen spinach, drained
1/8 c. pork shoulder, shredded
2 eggs
1/8 c. cheddar, shredded

Recipe Directions for 1574 Frittata w/pork and vegetables

  1. Heat olive oil over medium heat. Add vegetables until desired tenderness or crispness.

  2. Add pork and heat through.

  3. Beat eggs until well mixed and pour over veg and pork mixture until bottom is well set and releases from pan.

  4. Flip over until release from pan.

  5. Grate cheese on top and serve immediately.
