Chicken and mushroom filling for crepes

Recipe Ingredients for 1574 Chicken-Mushroom Crepe Filling (Carolyn Lee)

1 1/2 c. milk
1 tbs. flour
2 tsp cornstarch
1/2 c. Swiss cheese, shredded
1 pinch salt
1 pinch nutmeg
1 pinch cayenne pepper
1 1/2 c. chicken, shredded
1 c. mushrooms, sliced and sauteed
1/4 c. parsley, chopped (optional)

Recipe Directions for 1574 Chicken-Mushroom Crepe Filling (Carolyn Lee)

  1. Prepare basic egg crepes. Then, in a small saucepan over low heat, stir together milk, flour, and cornstarch until thick. Stir in Swiss cheese until melted. Season with salt, nutmeg, and pepper. Then combine cup of the hot sauce with the chicken or seafood and mushrooms. Stir in some parsley or minced onion if you like. Spoon mixture into the middle of each crepe. Roll up. Warm in a 325˚ oven. At serving time, pour the remaining hot sauce over the crepes.

  2. NOTE: Instead of using 1-1/2 cups of milk, I usually use a cup of milk and a half cup of white wine. (Or maybe 1-1/4 cups of milk and cup of wine?whatever) The recipe says this makes eight crepes, but, if you made eight, they'd be pretty skinny.
