3/4 c. milk
4 eggs
1/4 tsp salt
1/2 c. flour

Recipe Directions for 1574 Basic Egg Crepes courtesy Slim Gourmet

  1. Pour enough of the milk into the flour and salt to make a paste; then add the rest of the milk. Beat in the eggs. Select a non-stick frying pan the size of the crepe you want to make. Spray it with Pam; put it on medium-high heat. Wait 'till pan gets hot, then pour in about 2 tablespoons of the batter. Immediately pick up the pan and rotate it until batter is spread evenly over surface. Put back on heat until surface of the crepe is dry and bubbled. Flip over. When crepe slides easily in pan, flip it out onto a plate.

  2. NOTE: You'll probably make some weird looking crepes to begin with?maybe the shape of Africa or South America?but this really is easy, once you get the hang of it.

  3. This much batter will make about 14 crepes, depending on the size of the pan. I figure they're about 40 calories a piece.
