Recipe Ingredients for 15-minute Black Bean Salad

1/2 cup onion, minced
6 g cloves garlic, minced (2 cloves = 6 g)
2 cups black beans
1 cup corn, thawed
8 cherry tomatoes, quartered
1/2 cup red bell pepper, minced
2 tablespoons pumpkin seeds, coarsely chopped
1/4 cup parsley, chopped (cilantro)
2 tablespoons olive oil
3 tablespoons lemon juice
1 salt and pepper to taste

Recipe Directions for 15-minute Black Bean Salad

  1. Mince onions and press garlic and let sit for at least 5 minutes to bring out their health-promoting benefits.

  2. Mix all ingredients together and serve.

  3. This salad will keep for a couple of days and gets more flavorful if you let it marinate in the refrigerator for a while.
