Although, you don't really use 14 carrots, just a few. Recipe from Abby. You can also make this by substituting oat flour for regular flour.

Recipe Ingredients for 14 Karot Kake

2 cups flour
1 1/2 cup sugar
1/2 cup brown sugar
2 tsp salt
1 tsp baking soda
2 tsp cinnamon
1 1/2 cup oil
4 eggs
1 cup walnuts, chopped
3 cups carrots, grated
8 oz cream cheese
2 tbsp butter
3 3/4 cup powder sugar
2 tsp vanilla
1 tbs walnuts, chopped

Recipe Directions for 14 Karot Kake

  1. Sift together three times: flour, sugar, brown sugar, salt, soda, cinnamon.

  2. Make sure your have 3 cups of firmly packed carrots

  3. Add carrots and mix in the oil. Add the eggs one at a time. Stir in nuts. Mix well.

  4. Bake at 350 degrees in a jelly-roll pan for 20 minutes or until toothpick comes out clean.

  5. Make frosting by creaming together: cream cheese, butter, powdered sugar, vanilla, nuts and 1 tbsp of grated carrots.

  6. When cake is done baking and cooled, frost it and enjoy every single bite!
