Recipe Ingredients for 103 cal Pineapple Pumpkin Muffin

1/2 c. pumpkin
2 tbs. egg white substitute
1/2 c. fat free milk
2 tbs. apple sauce
1 1/2 c. pineapple
2 tsp. baking powder
1 1/2 c. whole wheat flour
1/2 c. oats
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 c. brown sugar

Recipe Directions for 103 cal Pineapple Pumpkin Muffin

In large bowl, combine egg, pumpkin, milk, apple sauce, light, crushed, and drained pineapple, whole wheat flour, whole oats, 2/3 cup sugar substitute and spices. Mix well. Spoon into greased (lined) muffin tins, almost to the top. Sprinkle with brown sugar. Bake at 425 degrees for 20 to 25 minutes. 12 muffins.
