Super simple red lentil soup. Season w/ red pepper flakes, salt and whatever other seasoning you'd like

Recipe Ingredients for 101 Cookbook Red Lentil Soup

2 tablespoons extra virgin olive oil
1 onion, chopped
3 tbsp chopped garlic
1 1/3 cup red lentils, picked over and rinsed
1 cup chopped carrot
1 cup chopped celery

Recipe Directions for 101 Cookbook Red Lentil Soup

Saute veggies in olive oil until tender. Stir in lentils and 6 C water or stock. Let simmer for ~30 mins, or until tender. Rice can be added for additional texture.
