Recipe modified from King Arthur flour recipe

Recipe Ingredients for 100% Whole Wheat Sandwich Bread II

1/8 cup orange juice
2 1/2 teaspoons instant yeast
1 cup water, lukewarm
2 tablespoons butter, cut into six pieces
2 tablespoons canola oil
3 cups King Arthur Traditional Whole Wheat Flour
3 tablespoons sugar
3 tablespoons potato flour
1/4 cup nonfat dry milk
1 1/4 teaspoons salt

Recipe Directions for 100% Whole Wheat Sandwich Bread II

  1. Combine all ingredients--mix and knead either by hand, mixer, or bread machine. Cover and allow to rise until doubled, about 2 hours.

  2. Grease loaf pan--gently deflate dough and shape into log 8 to 9 inches long (the larger the loaf pan the shorter in height the loaf will be.) Place the dough in the greased pan, cover and let rise until it has risen about 1 1/2 inches above the pan (1 to 2 hours.) Uncover and bake in preheated 350* oven about 35 minutes or until instant read thermometer inserted into center of loaf reads 190*. Remove from oven, let rest in pan a few minutes, then cool on rack.
