90 g whole wheat flour
360 g all-purpose flour
1 tsp salt
1/4 tsp yeast
1.17 cups water

Recipe Directions for 100 g bread 4/21

  1. 12 hour rise overnight in oven (turned off, of course)

  2. pour dough onto floured board, form into ball and let rest in basket lined with floured dishtowel (wheat bran helps prevent sticking)

  3. 1 hour rest

  4. let cast iron pan warm in over for 30 mins at 450.

  5. turn dough into hot pan, cover with lid of some sort (I use a big soup pot) for 30 mins, remove lif and bake additional 20 mins.
