Recipe Ingredients for 10-Minute Huevos Rancheros

2 eggs
1/2 c black beans, drained and mashed
1 tbs extra virgin olive oil
1 tsp lemon juice
1 dash sea salt
1 dash ground pepper
1/4 avocado, sliced
1 tbs salsa
3 tbs grated low-fat cheddar cheese
1 chopped cilantro, to taste
1 dash cayenne pepper

Recipe Directions for 10-Minute Huevos Rancheros

  3. 2. Heat beans in a skillet while eggs are cooking.

  4. 3. Remove beans from heat and mix in olive oil, lemon juice, salt and pepper. Add a pinch of cayenne for spicy beans.
