A nice muffin to grab for a quick breakfast. Make them on the weekend and eat them when you are running late out the door. Cut back on the butter if you want.

Recipe Ingredients for 10 Grain Cereal Muffins

1 cup 10 Grain Hot Cereal
1 1/4 cup buttermilk
1 large egg
1/4 cup sugar
1/3 cup butter
1/2 cup whole wheat flour
1/2 cup bread flour
1/4 cup dried cranberries
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder

Recipe Directions for 10 Grain Cereal Muffins

  1. Combine 10 grain cereal and buttermilk to soak

  2. Preheat oven to 400F. While oven heats:

  3. Cream egg, sugar and butter

  4. mix all other dry ingredients and add to egg/sugar/butter

  5. add soaked cereal and stir until just mixed

  6. spoon into greased 12-muffin tin

  7. bake at 400F for 15-18 min
