1 Yolk Eggness Recipe

This is a really tasty omelette type dish.

Recipe Ingredients for 1 Yolk Eggness

9 egg whites
1 egg
1 small zucchini
1 small yellow squash
1/4 large red onion
1 medium tomato
1/2 c grated Mozzarella, Part Skim Milk, Low Moisture Cheese
1/2 c grated colby jack cheese
1 tsp olive oil

Recipe Directions for 1 Yolk Eggness

  1. Warm olive oil over medium heat in large saucepan.

  2. Chop onion and place in pan. Cover. Allow to cook, checking and stirring occasionally.

  3. Meanwhile, slice zucchini, squash, and tomato. Set tomato aside. Add zucchini and sqaush to onions once the onions have started to brown.

  4. Stir egg, egg whites, spices(suggestions-garlic salt, lemon pepper, basil, italian seasoning, dill), and mozzarella cheese together in small mixing bowl. Add to saucepan. Cover.

  5. Allow to cook 5-10 minutes or until eggs almost cooked. Sprinkle colby jack cheese on top and recover. Remove from heat. (Eggs will continue to cook a little even after removed from heat).

  6. Once cheese has melted, remove from pan and arrange tomato slices on top. Cut into 8 slices.

  7. Serve.
