Chicken, mushrooms, tomato in a balsamic/dijon sauce

Recipe Ingredients for 1/3/15 Balsamic Chicken

1 tbsp olive oil
1 tbsp butter
48 g finely chopped onion, sweet
46 g shallots finely chopped
44 g leeks, sliced
259 g mixed mushrooms, sliced
2 cloves garlic, minced
550 g chicken breast, meat only, raw cut into 1-inch pieces
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
236 g artichoke hearts, drained, cut into quarters
411 g Del Monte petite diced tomatoes no salt , after cooking down the liquids, you will be left with much less

Recipe Directions for 1/3/15 Balsamic Chicken

  1. Makes 5 servings of 250gs each -- accounting for the weight difference btwn raw and cooked weights...

  2. Heat oil in heavy large skillet over medium-high heat.

  3. Add onion and garlic and saut? until just tender, about 4 minutes.

  4. Add chicken and cook until chicken is brown, stirring constantly, about 3 minutes.

  5. Stir in vinegar and mustard.

  6. Continue cooking until chicken is tender and cooked through, stirring constantly, about 3 minutes.

  7. Season with salt and pepper. Sprinkle with basil if desired.

  8. Serve over pasta, rice, couscous, quinoa, spaghetti squash, etc
