Southwestern Hashbrown, Bacon and Green Chili casserole

Recipe Ingredients for 1/2 Ouray Breakfast Casserole Portion

8 oz potatoes, hash brown
3 eggs
8 oz bacon, diced
1/4 onion, med
1 cup cheddar cheese
1 cup monterey jack cheese
1/2 cup picante sauce
1 cup green chilis

Recipe Directions for 1/2 Ouray Breakfast Casserole Portion

  1. Dice bacon and onion and fry until bacon is cooked and onion is soft and translucent.

  2. While cooking the bacon and onion, preheat the oven to 350 F. Mix remaining ingredients together and add the bacon onion mixture.

  3. Pour mixture into greased 8X8 casserole dish.

  4. Bake at 350 for 35 minutes and then let rest for 10 minutes.
