Once a day is not always helpful, because the small day-to-day fluctuations that everyone has in their weight might be deceptive. It is normal for a person's body weight to change slightly from day to day.
I think most people who are successful at this kind of thing weigh themselves once a week on the same day, at the same time of day. I "officially" weigh myself on Tuesday mornings, for example (although I occasionally check on other days as well).
Most people prefer to weigh themselves in the morning because this is when you weigh the least. A person's weight can fluctuate as much as 1-3 lbs a day, and people weigh the most at night because of all the food and liquids they have consumed. However, it doesn't necessarily matter whether you weigh yourself in the morning or later, as long as you do it consistently at a particular time.
You should weigh yourself every week. The body fluctuates naturally within a certain range of pounds, and therefore you may get one number one day, a pound up the next day, two pounds down the next day. If you weigh yourself every week, it's easier to see the direction your weight is going in--up, down, or staying the same.
I also weigh myself in the morning, before I eat. Whatever time you choose to weigh yourself is up to you, just make sure that you weigh yourself roughly that same time (as in, morning, after lunch, before you go to sleep, not by hour, haha) every week. I'd stick with morning because it's most likely that you're putting your body through the same condition--sleeping and not eating for several hours--as opposed to other times where you might have happened to drink more water or eat heavier food, etc.
Most will say not to weigh every day, however, there was a study done that showed that those who weighed every day lost more weight/maintained their weight better than those who weighed once a week. The thought behind it was that when they were weighing daily they were more in tune with the foods that triggered a gain, and were quicker to correct it.
I once did an experiment where I weighed myself daily rather than weekly. My weight each morning bore absolutely NO resemblance to what I'd eaten, drunk or done the day before. The morning after a big Italian meal and glass of red wine I was lighter, for example. I stopped the experiment short because I found it was interfering with my enjoyment of food. Instead of appreciating what was on the plate I was starting to get worried about what the scales would say the next day. And I don't need stress like that!
So work out what type or person you are and then weigh accordingly. Start with once a week and see how you go.
Also, as Carie said, the scale is not always helpful when you are first starting any kind of dieting or exercise regimen. Whenever you make a lifestyle change your weight is going to fluctuate significantly because of water storage. Using the scale may not even be helpful until a few weeks after you've started, when your body has had time to stabilize.

I use the tape measure to find if I'm losing weight or not. One week I didn't lose a pound but I lost and inch from my stomach. If you put on muscle than the scales won't move much.
I weigh in once a week. In the past, I would weigh in nearly everyday. Now I don't feel that urgency to do that anymore. I can wait a week now, and not be overly excited for the day to get here. I have learned to take it in stride.
Now this week, I didn't get to weigh in. So I am waiting till next week. But the upcoming is no biggy to me. It will be exilerating enough when I do weigh myself and I have lost. Even 1 pound, I will be thrilled about. If I don't, I will keep on trucking anyways!!!...ha! My whole demeanor is entirely different compared to being on past weightloss programs. Even I sometimes can't get over about my having such a layed back attitude about it all. Yet, I keep at it as best I can. I really like this way of trying to lose weight...calorie counting. Why it every took me so long to do this. I will never know.

I have to learn how my body responds to the food and drink I put in it. I need to see the fluid fluctuations. I need to see the actual weight gains and losses. I do the same thing. I think I weigh myself atleast 20 times aday. I hate doing it because I feel like a freak but I cant stop, its like I have to see if the scale is working even though I know it is right. My weight has been gojng down everyday or staying the same but I cant help myself. I def have a scale addiction haha
