I have no ideas. Basically I eat it with chicken. Or put some veggies on it. Does anyone have any good ideas?

Make a big ole pot of rice and beans. It's a complete protein, and there's lots of variations on it. Look up recipes for it on this site. You'll find a lot.
Use rice to stuff vegetables, such as peppers, zucchini, or eggplant. You can mix it up with some seasonings and stuff them as is, or you could even add ground beef or turkey to it.
Brown rice goes great with lentils. Add it to lentil soup, or make a lentil and brown rice casserole with zucchini, tomatoes, or whatever veggies you want.
Strangely, rice is also great in cold salads. Add it to bean salads like garbanzos, lentils, black beans, etc.
You can also make a delicious brown rice pilaf. Add in other grains such as bulgur for a little variation.
Finally, brown rice makes a great "bed" for other dishes, such as ratatouille or other vegetable mixtures, or meats with sauce. There's so many things you can do with it! Hope I helped some.
Rice balls are a lunchtime favorite for my kids. Roll the rice into a ball (wet your hands a bit so the rice doesn't stick). You can put a little egg or chicken or pork or avocado in it if you like. Roll the rice ball in fish sprinkles, then wrap in Nori. Kinda like sushi, but easier to make.
A favorite of mine is spanakopita - google for recipes, but basically it is brown rice, swiss cheese, spinach, nutmeg, and a bit of paprkia for color. Mix it altogether, put it in a casserole dish, and bake. Mmmmm! (This is a main dish meal).
You can mix leftover rice into meatloaf, or meatless meatloaf for example a lentil loaf - replace the hamburger with lentils in your favorite recipe.
If you like mexican, try this white chili: rice, chicken breasts, colby cheese, jalapeno peppers, cumin, all mixed together... simmer to blend the flavors. Top with sour cream and cilantro and serve with corn tortillas.
We also top rice with chili. I learned this from my Japanese friend. She wanted to learn how to make "american" chili, and her first attempt, she served it over a bed of rice... because she couldn't imagine just eating all that hamburger in a bowl!!! And it was really good like that, plus it cuts the fat content. So it's stuck and now it's a habit at our house.
Then there's rice pudding: google for a recipe. Or for a simple breakfast, serve warm rice with milk poured over it, some raisins, and a little cinnamon and sugar.

I like brown rice, canned tuna, red onions, diced carrots, peas and cilantro all mixed together at room temp with fresh lime vinigarette dressing.
Sometimes I'll have brown rice, black beans, pico de gallo and a lil sprinkling of cheese on top - kind of like a burrito without the wrapping.
This may not sound fantastic but it is :)
Steam your brown rice, add a salmon fillet (break it apart after you grill it)
Add some salad (no dressing needed) and a tortilla, some salsa (a tea spoon is only 10 calories with some brands) and vol-la! Nummy and pretty conservative fish taco. Even my non dieting husband loved it.

I cook a larger amount of brown rice and pre-portion it for the next few days. I really like to wilt some spinach and garlic and stir in the cold rice into the spinach pan, let it all get hot, and stir in some grated Parmesan cheese, 1 tablespoon is enough to make it yummy but you can always add more. Figure a half-pound spinach and 1/2 cooked brown rice.
